INSPIRATION:
In 2022, we decided it was about time we brewed a La Sirène take on a lager. A Bohemian-style pilsner felt like the right choice for us -- rustic, expressive and old world. Natural Pilsner gives a nod to the traditional Pilsners of Bohemia (western Czech Republic) from the mid-1800s when the style was created. In true La Sirène style, we've strayed from the rule books, opting for locally-grown organic malt and hops, giving us more expressive flavours that position this is a southern hemisphere, high quality and rustic pilsner. "Personally this was the first beer style I fell in love with and the first that I did a deep dive into during brewing school, those many moons ago, so it holds purpose for me as an Artisan Brewer and is the beer that most brewers reach for when needing to recalibrate their palates. METHOD: Natural Pilsner starts with only the best organic and local malted barley, wheat and hops available. Our soft Melbourne water lends itself well to the style, and helps deliver a nice crisp finish. We use a traditional lagering process, where we leave the beer to mature for 6 weeks+ at 0°C. This long and slow process gives the best results in terms of the beer's final expressive qualities. Natural Pilsner goes unfiltered to maintain the soft subtleties that the organic ingredients showcase in this lager.

TASTE: A light golden hue, slight haze and floral aromatics are present on pouring - we encourage a slightly firmer pour than usual to give a thick, mousse head. On the palate, expect fresh hay and slightly biscuity grain characters, subtle honey and spice and a bright, lemon citrus character. Smooth and creamy texture and a crisp finish make this a highly drinkable lager that is full of character.

Pair with creamy goat's cheese, fresh salads, grilled chicken, fried foods, spicy dishes.
